What it is
A firm orange mushroom that seeps carrot-coloured milk when cut and stains green with age and handling, both reassuring signs. It is a mainstay of the Baltic and Eastern European salting tradition, layered with salt in jars for the winter.
Where and when to find it
Under pine on sandy soils. In season roughly August to October.

The woolly milk cap (Lactarius torminosus) is acrid and causes stomach upset; it has a shaggy, in-rolled pink cap and white milk. The saffron milk cap is identified by its carrot-orange milk and the green staining where it is bruised or ages.
